Sabaidee! This recipe is simple and quick to make. It is clean eating at best. Growing up, we ate this dish at least 3 times a week. My mom would make it with papaya, cucumber, vermicelli noodles, shredded carrots, snake green beans, and sometimes even with shredded cabbage. Once again, I think my mom created different versions of this salad because she wanted to make use of these vegetables before they went bad in our refrigerator.
Papaya salad is my first love if we are talking about salads but I do not always have access to papaya. Therefore I will make this salad with either cucumbers or vermicelli noodles. I promise it is just as good!
When I was sick with Gastric Cancer, I craved this dish all of the time. My mom would make it with cucumbers minus the chili peppers and the fermented ingredients.
