Cucumber Salad (Som Tum)

Sabaidee!  This recipe is simple and quick to make.  It is clean eating at best.  Growing up, we ate this dish at least 3 times a week.  My mom would make it with papaya, cucumber, vermicelli noodles, shredded carrots, snake green beans, and sometimes even with shredded cabbage.  Once again, I think my mom created different versions of this salad because she wanted to make use of these vegetables before they went bad in our refrigerator. 

Papaya salad is my first love if we are talking about salads but I do not always have access to papaya.  Therefore I will make this salad with either cucumbers or vermicelli noodles.  I promise it is just as good! 

When I was sick with Gastric Cancer, I craved this dish all of the time.  My mom would make it with cucumbers minus the chili peppers and the fermented ingredients.  It was so refreshing and it satisfied my cravings.  The best part was my stomach was able to digest it without a problem.    As always, thank you for reading and visiting my blog!  MA DER! Cucumber Salad

Ingredients
  • 1 cucumber, peeled and sliced thinly
  • 1 Thai chili pepper or as many as you like
  • 1 garlic clove
  • pinch of salt
  • 1 tablespoon lemon or lime
  • 10 cherry tomatoes, cut in half
  • 1 teaspoon sugar
  • 2 tablespoons fish sauce
Directions
  • Step 1 Peel and slice cucumber flesh thinly.
  • Step 2  In a mortal and pestle pound garlic and chili with a pinch of salt.  If you do not have a mortal and pestle, you can mix these ingredients in a large mixing bowl.  Just make sure you finely mince the garlic and chili pepper.  Add cucumber and tomatoes then start pounding.
  • Step 3 Add lemon or lime, sugar, and fish sauce.  Mix all the ingredients together.  Taste and add more salt or lemon if needed.  It depends if you like it more on the sour or salty side.  Serve immediately in a bowl.  This dish can be eaten with vermicelli noodles or alone.
