Kimi’s Kale Salad

I am about balance when it comes to food. I take in the good and the not so good.  I listen to my body a lot.  Most of the time it craves protein and carbohydrates.  I do not go crazy on carbs because there is little room to fill my stomach at meal time.  It’s part of my strategy since I eat every 2 hours.  I go heavy on proteins and less of other food groups.  You get the idea. 🙂

The day I re-created my girlfriend, Kimi’s Kale Salad, I felt like eating something healthy.  Last week Kimi sent her recipe with a photo to entice me.  I knew I had to make it.  It’s quick and fun to make.  This salad can be made many different ways.  Add avocado if you like, nuts, protein or other fruits.  You can make it your own just like I did.  Ma Der!  Ma Der!

Kimi's Kale Salad

A colorful healthy alternative to your regular pizza.

Ingredients
  • 1 cup organic kale, chopped
  • 1/4 of one cucumber sliced into one inches
  • 3 strawberries, sliced into four pieces
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper
  • 1/2 cup sweet potatoe, sprinkle with olive oil, salt and pepper
  • 1/3 cup garbanzo beans, drained
  • 2 tablespoons Brianna's Real French Vinaigrette
Directions
  • Step 1 Preheat oven to 400 degrees F. Bake sweet potatoes for 15 minutes or until tender.
  • Step 2 Grab a bowl or medium size plate, add kale, garbanzo beans, cucumbers, strawberries and sweet potatoes.
  • Step 3 Add dressing then toss ingredients together. Add salt and pepper to taste.
